Mango Agua Fresca Recipe!8:00 AM
Today I cooled down on this warm Taco Tuesday in Atlanta by making a mango agua fresca to accompany some black bean enchiladas I made for lunch. An agua fresca is a Mexican drink that mixes fruit, citrus, and sugar. I loosely followed the recipe in one of my favorite cookbooks, Tacolicious. I've scaled it down to make a smaller batch that fits better in a conventional household blender.
Mango Agua Fresca
Stuff You'll Need:
- 3/4 cup chopped ripe mango
- 2 Tbsp freshly squeezed lemon juice
- 2/3 cup sugar
- 4 cups of water
Put all ingredients in the blender and pulse until smooth. Serve over ice and preferably alongside messy enchiladas.
