Date Night Dinner: Avocado Rolls & Sriracha Salmon

For date night this week, I roped my boyfriend into making another very involved meal. Luckily everything was tasty, so it was worth all the chopping, mixing, and dirtying every utensil in the kitchen! We made Teriyaki Salmon with Sriracha Cream Sauce (recipe from Damn Delicious) and Cheesecake Factory Avocado Egg Rolls (recipe also from Damn Delicious). The salmon wasn't as amazing as it looked in Damn Delicious' pictures, but the Avocado Egg Rolls I would definitely make again!

The avocado egg rolls are basically fresh, chunky guacamole that you roll in egg roll wrappers and fry. (For all my gluten-free family members, here is a recipe for gluten-free egg roll wrappers.) You could also coat these in oil and bake them at high heat until they're golden brown.

The cilantro dipping sauce that goes with the avocado egg rolls didn't have much spice because I omitted the jalapeno. So, if you're going to omit the jalapeno, don't bother making the sauce. A barbecue ranch mix or sriracha mayo would go just fine.

For the salmon, the marinade was overly complicated for what it was. Next time, I'd just douse salmon in store-bought teriyaki sauce and then dab the finished product with hints of sriracha. The cream sauce was pretty good, but it was basically sriracha mayo which is my new favorite condiment.
